Ο Νίκος Θυμάκης εργάστηκε σε 3 διαφορετικούς Δήμους της Περιφέρειας Αττικής μεταξύ 2000 και 2020, σε προάστια της Αθήνας, ως Επικεφαλής Τμημάτων Πάρκων και Κήπων , Σύμβουλος για το Αστικό Πράσινο και τα προγράμματα της ΕΕ (LIFE, H2020, Erasmus) ενώ διετέλεσε ειδικός επιστημονικός σύμβουλος της Ανθοκομικής Έκθεσης Κηφισιάς από το 2004 ως το 2012 . Υπηρέτησε επίσης στη ΣΑΕΚ ΑΤΤΙΚΗΣ του ΕΛΓΟ ΔΗΜΗΤΡΑ ως Διευθυντής και το Ινστιτούτο Γεωπονικών Επιστημών ως Πρόεδρος. Ως Επίτιμος Πρόεδρος της Ένωσης Ελλήνων Εξαγωγέων και Εισαγωγέων Φυτικού Υλικού (ΕΣΕΕΦΥ) εκπροσωπεί την Ελλάδα στην Ευρωπαϊκή Ένωση Φυτωριούχων (ENA) και τη Διεθνή Ένωση Φυτωριούχων (AIPH). Εργάστηκε επίσης στο Κατάρ, την Τουρκία, τη Σαουδική Αραβία, την Κύπρο, την Ολλανδία, τη Βουλγαρία, τη Γαλλία, τη Ν. Κορέα και την Ταϊβάν, προωθώντας τον αυτοσυντηρούμενο «Ελληνικό Κήπο» (βασισμένο στην Ελληνική Χλωρίδα και εμπνευσμένο από τον Βαλκανικό Βοτανικό Κήπο Κρουσίων) παγκοσμίως με τις δραστηριότητές του και ως Ειδικός Κηποτέχνης, Σύμβουλος σε Ιστορικούς Κήπους και Πάρκα, και Ειδικός στη Διαχείριση Φοινικοειδών.
